The Mediterranean Board I'm Obsessed With

Last week when we stayed at The Proper Hotel, we had this incredible Mediterranean board that was to die for! I’m so obsessed with it that I order it every time we stay there! So, you know I had to recreate it and make my own version! It’s perfect to have in your arsenal for a quick, easy and tasty dish that impresses and would make a great addition for Super Bowl Sunday! Surprise people and change it up! Plus, this board is healthier than traditional meat and cheese ones, and would be great for all those plant-based dieters.

I love visiting our local Persian market to pick up some fresh produce and yummy, prepared side dishes! The idea with this board it to get creative! I'm sharing some of the things I've been adding to mine, but feel free to pick and choose whatever your jam is! That’s the great thing about charcuterie boards and why they’ve become so popular.


INGREDIENTS

Veggies:
Roasted or Raw Cauliflower
Grilled Zucchini
Sliced Persian Cucumbers
Sliced Radishes
Sliced Yellow and Orange Peppers

Dips:
Hummus (drizzle with olive oil and sprinkle Za’atar to look extra fancy)
Eggplant Salad
Baba Ghanoush
Labneh (again drizzzle!)
Lentil Salad (I make a big batch of this weekly from my fave cookbook, It's All Good)
Cucumber Salad
Bitchin’ Sauce (if you know, you know)

Extras:
Pickled Turnips
Olives and Herb-Infulsed Olive Oil
Herbed Feta Cubes
Spiced Pecans, Almond or Walnuts (Trader Joe’s has lots of fun ones)

Starch:
Warm Pita Bread
Couscous
Warm Chips (I put them in the oven with the pita bread at 200˚ while I prepare the board)

Protein of Choice:
I did a grilled tuna steak and it was AWESOME but you could also do some grilled chicken, sausages or shrimp!


You could add absolutely anything you want to this board and make it as healthy or indulgent as you want. I hope you guys enjoy it as much as I do! PS this is a fun treat for dinner, my kids love it and its no fuss!
