Sweet Potatoes with Chili Lime Vinaigrette
Since having kids one of the biggest things that's changed in our lives has been our social life. Long gone are the nights of eating and drinking out on the town until the wee hours. It's a rarity that we can get our entire group of friends together because there's always someone that can't get a sitter. So what is our solution? Potlucks, Kids an all! It's chaotic, loud and there's rarely a consistent menu but the food is always delicious and the company even better!
It was at one of these said potlucks that I was first introduced to this dish by one of my favorite foodie friends, Hillary. She always has a way of bringing the perfect dish to impress. Anyway, through the years this dish has made me famous amongst my extended family. It is a no fail crowd pleaser. I can't tell you how many parties, dinners, holiday functions I have taken it to and it never fails; someone always begs for the recipe!

Ingredients:
- 2-4 large sweet potatoes
For Vinaigrette:
- 3 cloves of Garlic Peeled and minced
- 1/4 teaspoon of Coarse Sea Salt
- Zest of 1 Lime
- Juice of 1 Lime
- 1 inch piece of a Red Chili Pepper super finely minced or more to taste
- 1 Tablespoon of Local Honey
- 4 Tablespoons of Olive Oil
- 1/4 cup of finely chopped Cilantro
- Salt and Pepper to taste
Preparation:
Give sweet potatoes a good wash, poke them with a fork a few times and roast with skin on at 425F for about 45min-1hr. Set aside to cool. Once cool enough to handle slice into 1 inch rounds with or without skin depending on your preference. Set aside.
While sweet potatoes roast mash garlic and sea salt into a paste. I use a mortar and pestle but you can easily use the back of a spoon. Zest your lime in and mix/mash well. Transfer paste to a small bowl with cilantro, chili and whisk in olive oil, lime juice and honey until well combined. Transfer sweet potatoes to a platter drizzle with vinaigrette and serve.
